Human nutrition is about the food we need and what happens to it inside the body, and this topic (syllabus 7.1 to 7.5) begins with a balanced diet. You should know the principal dietary sources and roles of carbohydrates, fats, proteins, vitamins C and D, the mineral ions calcium and iron, fibre and water, and the deficiency diseases scurvy and rickets. Food then passes along the alimentary canal, from the mouth through the stomach and small intestine to the large intestine, assisted by organs such as the liver, pancreas and salivary glands.
Digestion happens in two ways. Physical digestion, by the teeth and stomach, breaks food into smaller pieces and increases its surface area, while chemical digestion uses enzymes to break large insoluble molecules into small soluble ones. Amylase breaks starch to simple sugars, proteases break protein to amino acids, and lipase breaks fats to fatty acids and glycerol; hydrochloric acid in the stomach kills microorganisms and gives an acidic pH for enzymes. The small soluble products are absorbed in the small intestine, whose lining is folded into villi and microvilli to give a huge surface area for uptake into the blood and lacteals.
